You try to stay away from starches–bread, noodles, rice, potatoes, anything made with flour. Anything with lots of sugar like candy, even fruit.
You learn how different foods affect you by measuring your blood sugar after you eat them. Everyone is different. For instance I find I can eat half a potato with no problem, but the same amount of rice spikes my blood sugar, so I stay away from rice. I find that crackers give me less trouble than bread, so I eat a lot of things with crackers–peanut butter, cheese, etc.
Most veggies are okay, but some have a lot of sugar, like carrots, beets, etc. I can eat raw carrots but for some reason not cooked carrots. I eat a lot of salads. Sometimes I have roasted veggies for dinner. I couldn’t eat them every day but once a week or so they’re nice. If I go to a restaurant I ask if I can get veggies instead of potatoes or rice.
Of course meat, cheese, fish, etc. are fine. Your regular high-protein/low carb diet works fine, in fact I don’t have to go as extreme low-carb as the Atkins diet.
Exercise is also very important. Exercise burns blood sugar, so you can eat stuff before you exercise that you couldn’t get away with otherwise. I walk about 30 mi. most days, and I can have a few mouthfuls of chocolate, or an apple, before my walk, and it doesn’t show up in my blood sugar reading. I can half half an apple with dinner, or after dinner, and it gets covered up by the other food.
