Something yummy, maybe with fruit, that isn’t going to raise her blood sugar. Does anyone have any good recipes, something you’ve actually made, i’m not just looking for a link i can search online myself, i want to hear about personal experience.

i do alot of fruit salads with mini marshmellows
its always a hit but double check the marshmellow thing i dont know for sure if they will raide her blood sugar

In terms of blood sugar, fruit and candy are almost exactly the same. She might be able to get away with a very small serving of tart berries (less natural sugar than tropical fruit) mixed with sugar-free whipped cream, but that wouldn’t be very satisfying.
My favorite low-carbohydrate dessert is cheesecake. You can substitute Splenda (or some other sugar-free sweetener) for sugar and crushed nuts for the graham cracker crust. I mix the crushed nuts with butter and a tablespoon of Splenda and then layer the nuts on the bottom of a pan. After that, I pour the cream cheese mixture (two packets of cream cheese, half a cup of Splenda, a little vanilla extract, a little salt, 2 eggs, and maybe a little sour cream) into the pan and bake for 35-45 minutes on 325. The creamier you blend the mixture, the better the cheesecake will be.
Today I’m making flax muffins with strawberry cream cheese icing. I use flax meal instead of wheat flour, Splenda instead of sugar, and Torani sugar-free syrup (zero carbohydrates!) for the icing flavoring. They’re kind of a cross between cupcakes and muffins when you add the icing, I guess.
