Since carbohydrates eventually turn to sugar in our bodies they eventually need insulin to be fully metabolized. The problem is that the more insulin your body requires the fatter you will get. A high protein diet is best for diabetics. That usually means lots of cheese, eggs, and meat. You can have a vegan diet that is fairly high in protein if you enjoy eating a lot of beans and legumes but that can get very boring, very fast. I recomend setting the moral issues aside and focusing on the most important thing, your health. Eating meat is good for you. The high amount of protein will take longer to digest making your meals “last” longer. You won’t get those cravings to snack between meals, meaning you can reduce the amount of insulin you will need, meaning you will be better equiped to control your weight.

Ihave been a noninsulin type 2 diabetic for 21 yrs. I control it by my diet. Oatmeal with raisins, banana, and frozen straberries for breakfast. Other meals are usually homemade soup or a stir fry using tofu for protein or some kind of meal using beans. It’s imporant not to load up on carbs. Your body converts them to sugar right away ccausing sugar levels to spike. I never eat white potatoe, white bread, white rice or white pasta. Brown rice and whole muti-grain breads and yams are o.k. I do not red meat but do have chicken and turkey sometimes. Peanut butter on toast is a nice treat. Try to stay away from butter and margarine. 2% milk, low fat cottage cheese and eggs in moderation are o.k. All provide portein. Fresh fruit is important as are fresh veggies. Canned veggies have too much salt for me. I do not cook with salt or add it to anything. Use spices instead. Veggie omelets are nice. I hope that your doctor explained that diabetics are prone high cholesterol, strokes, heart attacks, kidney problems and neurapthy. If you are aware of those you will understand why I eat the way I do. Because I have watched my diet I have none of those problems and Dr. says if I lose another 10 pounds I may be able to quit taking my medicine. I waish you luck. After a little while you won’t miss the sweets, chips, salt and butter or margarine. I promise. I also read ingreients in everything I buy, Looking especially for anything which has High Frutose Corn Syrup, a very bad sugar artifially made from corn. Eliminate that from your diet and if you are overweight the pounds will fall away. It’sin all kids of thins, even bread. There are some breads w/o it. Excuse typos, not one of my skills.The mainreason I don’t eat red meat is because of the cholesterol in it which diabetics MUST control. Skinless chicken and turkey provide a high quality portein. Eat plenty of fiber. Accordign to web md diabeticss who decide to control it with a vegetarian diet do not have to be as concerned about counting their carbs.
The big thing to avoid is the sugars and the white foods. This includes potaoes and pastas. Use sweet potatoes instead and whold grain pastas.
When doing vegetarian for whatever reason you must be a label reader. If the first ingredient is enriched .. put it back. Look for products that use whole grains.
