What are good staple foods to have at home for people with diabetes?

This is my first winter really focusing on my eating and I live in the Northeast, with are first full storm last week I realized that my days of laying around with friends eating popcorn and watching movies may be over on a day off. What do other store in their home’s for those snack attacks.
I’m looking for non-parashiable items for when we get these sudden snow storms.

I understand that with diabetes, the proximal tube/loop of henle/etc cannot get rid of all the excess glucose that is pumped through the nephrons, resulting in sugary urine. BUT, I don’t understand how the presence of glucose would increase the VOLUME of urine. Can someone explain?
I’m guessing it has something to do with osmosis but I can’t put my finger on it.
